Frugal Meal: Beans and Rice

Sounds boring, doesn't it? Well, I have found a way to spice it up a bit and make it enjoyable for my whole family.
Joining with Mary today, I am posting a cheap (and easy!) meal idea. I have made a variation of this meal twice this week, with surprising acceptance from my family.

Last night's dinner cost a total of about $3.00. Not bad for a family of six! (Okay, Noah and Isaiah didn't really eat that much...except that Noah eats what I eat, right?)

First I started with a box of Zatarain's Dirty Rice Mix, and prepared according to directions on the box. Then I added about 1/3 red onion and 1/3 zucchini (both sauteed in olive oil), and one can of seasoned pink beans. As a side I made biscuits using Bisquick. That's it! Super easy, tasty, fairly healthy - and cheap!


*The variation I did earlier in the week was using Rice a Roni pilaf instead of the Zatarain's. To cut down on costs even more I could use plain white rice and my own seasonings.

LOL! I bet every family has a "staple" that they eat at least once (or twice, or three times) a week. Mine alternates: we go through phases of tacos and sometimes omelets- both pretty easy and I always have the ingedients on hand.
